Orange cake

Once, when searching for an orange cake recipe for passover, we came across this orange cake recipe on SBS (an Australian public broadcaster) that boiled and blended whole oranges, peel and all. It leads to a deliciously moist orange cake that is almost self-saucing.

INGREDIENTS

  • 2 oranges
  • 250g caster sugar
  • 6 eggs
  • 250g almond meal
  • 1 tsp baking powder
  • Icing sugar

STEPS

  1. Bring a large pot of water to the boil, and cook in the boiling water for 2 hours. Drain, allow to cool to room temperature, then puree.

  2. Preheat the oven to 160ºC. Grease and line a 22 cm spring form cake tin with baking paper

  3. Beat the eggs and caster until well combined. Stir in the orange puree followed by the almond meal and baking powder.

  4. Pour the batter into the prepared tin and dust the top with extra caster sugar. Bake for 1-1.25 hours, until the top is golden and a skewer inserted into the centre comes out clean.

  5. Allow to cool in the tin. Dust with icing sugar, cut into slices and serve.
